Banana-Nut muffins (gluten-free)

Ingredients
- 3 Tablespoons canola oil or melted butter
- 3 eggs
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1/4 cup coconut flour
- 1/4 teaspoon baking powder
- 1 Mashed, ripe banana
- 1/3Cup chopped nuts (optional)
- coconut flakes, for tops (optional)
Instructions
- Just mix up the ingredients. Blend into a smooth batter.
- Scoop batter into a muffin tin with paper liners.
- Bake 15-20 min at 400 degrees.
