Banana-Nut muffins (gluten-free)

Ingredients
  • 3 Tablespoons canola oil or melted butter
  • 3 eggs
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/4 cup coconut flour
  • 1/4 teaspoon baking powder
  • 1 Mashed, ripe banana
  • 1/3Cup chopped nuts (optional)
  • coconut flakes, for tops (optional)
Instructions
  1. Just mix up the ingredients. Blend into a smooth batter.
  2. Scoop batter into a muffin tin with paper liners.
  3. Bake 15-20 min at 400 degrees.
  4. Enjoy!
