Pumpkin Gingerbread Bars

Preheat oven to 375 degrees. Spray a 9-inch square pan with nonstick cooking spray.
Ingredients
- 2 eggs
- ½ cup packed brown sugar
- ¾ cup canned pumpkin
- 2 Tb. Molasses
- 1 tsp. vanilla
- ¾ cup flour
- 1 tsp. baking powder
- 1 tsp. cinnamon
- ½ tsp. ginger
- Optional but delicious:
- 2 Tb. Chopped candied ginger
- 2 Tb. Chopped walnuts
Instructions
- Beat eggs with electric mixer at high speed for 2 minutes. Add brown sugar slowly, beating well after each addition.
- Add pumpkin, molasses, and vanilla. Beat at medium speed for 2 minutes.
- Combine flour, baking powder, cinnamon, and ginger. Stir to blend.
- Add flour mixture to pumpkin mixture and stir well.
- Add optional candied ginger and walnuts and fold in gently.
- Pour into prepared pan. Bake 20 minutes or until a wooden toothpick inserted in center comes out clean. Let cool before slicing
